I am constantly trying to find recipes that my family will love that won’t take me all night to make. I stumbled across this one on Pinterest and modified it to better fit my family’s style and now I want to share it with you. It is so yummy and literally the easiest thing I’ve ever made. So here we go! This is the 6 can chicken taco soup!
Ingredients
- 1 can black beans (drained & rinsed)
- 1 can pinto beans (drained & rinsed)
- 1 can petite diced tomatoes
- 1 can sweet corn (drained)
- 1 can (12.5 oz) chicken breast (drained & shredded)
- 1 can (14 oz) low-sodium chicken broth
- 1 packet taco seasoning
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- fiesta blend shredded cheese
Instructions
- Combine all the ingredients in a large pot and bring to boil over medium heat. Once it starts to boil I like to add a couple handfuls of cheese, because well, who doesn’t like lots of cheese? Once the cheese has melted turn the heat down to low and let it sit for about 10-15 minutes. Stir occasionally.
- Serve with more cheese of course, tortilla chips, sour cream, and any other taco toppings you and your family enjoy.

Isn’t that fabulous??? Dinner is ready in 20 minutes and you only dirtied ONE pot! This recipe really speaks to me as a mom who hates dishes. Kidding. Kind of.
